All the Porkydigans are confused, because Chef Porky said he will cook the ordinary instant pre packaged Sarawak Laksa that guaranteed to taste as good as kopitiam's Laksa stalls back in Cat's City. Well, its easy.. just add lots of fresh ingredients .. and true enough it did cure some homesick as least..

Maggie Goreng Mamat Style
Maggie Goreng was the first improvised Maggie recipe that Porky had when he was on Bots2U business trip to Melaka back in 2004/5. He never tasted Maggie noodle being prepared in such way before, it was in an Indian Mamak restaurant underneath the little hotel where he stay. It has this rich and interesting flavor, nice springy noodle texture and aroma of stir frying from a hot wok . Over the years, Porky tried and almost perfected it, but there are many versions of it. Today, he will show you how to cook it the original way, and hopefully more recipes in the future.
Red Bowl : Curry Powder, Turmeric, Salt, MSG, Paprika, Dried Chili for seasoning.
Green Bowl : Tomatoes Ketchup, Chili Ketchup and Soy Sauce
Others : 2 Maggie Mee, Tomatoes, Chopped Garlic, Egg and Calamansi.
Add 1 tbsp oil to spices in red bowl, mix evenly, this is a self made fresh seasoning paste, taste better than the one that comes with the noodle
2 dried Maggie Mee/Noodles
Boil water in cooking pan to pre-cook the dry noodles
if Maggie Mee stated its 2 mins to cook, just cook ours for 1 min, remove hot water and strain it to dry, run under running tap water to quickly cool it down, and leave to dry, this will maintain chewy texture.
heat up the pan, add oil and when its hot, add in garlic, cook until aroma
add in tomatoes next, cook for 2-3 mins under medium heat
add in pre-mixed spices (red bowl) and stir evenly under medium heat for 2 mins, then add sauce mixture (green bowl) and mix until bubbling
add in noodle, mix it so it coat evenly with the sauce, then add an egg and stir fry it until slightly dry for about 3 mins in high heat.. Porky say GORENG.. GORENNGG...
tadaaa... bits done ! Maggie Goreng !!! (luncheon meat is optional)
If available, prepare some clean banana leaf as plate, first slightly heating it over the flame from a stove to release the aroma. Calamansi/small lime can be squeeze into dish just before serving to reduce the oily taste. Yummyness guaranteed says Porky (aka Hang Mamat), hence the name given to this version of basic Maggie Goreng..

Remote Control for Life
If there is a cool contraption that we would like to have now, it would be the remote control from the movie Click (by Adam Sandler). But why need one if all Porkydigans are living their lives to the fullest ! a good movie to watch, it really portrayed that all time and effort spend at work will gain you something but loses other more important things in life like family and health. Porky will always remember Morty's advice..

Mom Famous Long Bean Rice
This is obviously one of the most famous recipe from Mom's Kitchen. Porky say old school dish from Cat's City, growing up eating it so kind of embedded in the hunger DNA where there is no other food that can satisfy the hungriness when you are particularly craving for this one. The recipe is easy, just 3 ingredients .. Rice, Long Bean and Sun Dried Prawns and optional garlic. However the steps and care taken into the cooking process is solely depends on experience, it take practice, multiple trial and error to get to taste like mom's version. Have been trying to document this for a while now, few years to be exact, finally we got the chance.. so here we go ..
easy ingredients (soaked dried prawns if you get the salty type)
First - heat up pan with oil and stir fry the dried prawns until the whole house smells
Then add the long beans, cook it until it slightly soft (can add little water and cook until it evaporated)
add the washed rice, and cook or stir fry together until it mix well with the prawns and beans
Now here is the tricky part, previous attempt of transferring the slightly stir cook rice with the ingredients into rice cooker for cooking doesn't yield good result - the beans disintegrated if you do so. According to mom, the best way is to boil the rice using the same pan or wok where we first cook the ingredients in. Add water, maybe slightly more than one thumb rule of using rice cooker to cook it (you can keep adding water and check the rice consistency as you cook). Raise the temp to high heat, let it boil and evaporate, then close the pan lid and reduce to low heat. Let it simmer until the rice is cook, and mix it once a while to prevent bottom from burning, mixing also ensure the flavors are infused into the rice. This tricky part is about trial and error, experience matters !
after 20-30 mins of cooking - tadaaaa ! its done, and it should look like this. Texture of the rice is just like normal plain rice cooked using a rice cooker, but with slight oil like chicken rice or garlic rice. Porky clapped his paws, as a sign of satisfaction in recreating mum famous recipe -

Pork Dickson 2016 Trip Pt.1
It was good, a well planned trip after spending 2-3 days at The Curve, then retreating to a hidden resort in Pork Dickson for a night before returning to Porky's Cavern. It was a short trip, but lots of fun with all the Porkydigans. Porky say too much story to tell, so will have Part 2 of this post, so bilex (pksh : relax) !

Horton Favourite Puzzle Game - IQ Splash
Horton or Bongton the Ephant is the Engineer and Inventor in Porky's Cavern. Porkidigans will always need cool and unique one-of-a-kind contraptions at home. Horton will normally design and build anything imaginable by Porky. In his free time, Horton like to solve complex puzzle game to put his brain to work, unlike Benedict and Bukpeel that hit the couch with popcorn and remote control on their paw all the time. Introducing his current favourite game - IQ Splash from Smart Games. It's like a jigsaw puzzle with interlocking tiles, but there are 111 ways to solve it, with each placement of a beginning tile will change the final layout of the game - anywhere on the base board.
It comes in a nice travel box with booklet, shown is one of the arrangement style to complete it
the booklet shows various difficulty level you can choose from
today Horton will teach you the 1st puzzle as an example - Starter no.1. Two pieces tiles are needed to complete the puzzle - sounds easy .. all you need to do is put it in and fit to the base
Tadaaaaaaaa !!! Porky clap hands..
The level of difficulty ranges from Starter to Expert, according to the booklet it is good for 0-99 years old kid !!! interesting indeed. For every stage that any Porkydigans can complete, it will be posted here as trophy says Porky !

PCC : Pork Dumpling
Seeing dumpling wrapper for sale in the frozen section on a few trip to hypermarket have tempted Porky to venture into making his own dumpling. The ingredients are plain simple; cabbage, minced meat, salt & pepper and egg. Round dumpling wrapper are used in this recipe. You can find it easily in the section where they kept Roti Prata/Canai section. Well, let's start !
minced meat with some fats (not lean) as main patty
finely chopped cabbage
egg white as glue to seal the wanton securely, egg york will be use for patty
mix everything evenly, can add few drops of sesame oil for aroma
using your creativity, wrap everything neatly, apply egg white to seal it
1st method- steaming
2nd method - boil in water (this one taste the yummiest)
3rd method - pan fried (add water occasionally so it maintain soft consistency)
Out of the 3 methods tried, Porky say the tastiest one is the simplest to cook, just throw the dumpling into boiling water ! the steam type need to be eaten as soon as its out the steamer as it harden pretty quickly. The patty is the key ingredient here, so next time we will try to add more flavor like salted fish, preserved vege. and dried shrimps for a try. Bon Appetite !
