Digby Cooking Curry..

Wow, it's 2014 - Bappy New Year says the Porkydigans ! Well, time sure flies and every single day, life is being lived to the fullest here back in Porky's Cavern. Today, Digby the Mole is cooking chicken curry, one of few dishes that got documented because its yummy...

Digby and his bottles of tricks
(curry paste, coconut milk, peppers)

Lemon Grass, Garlic, Shalot, Ginger

Ladies Finger, Baby Corn, Tomato, Brinjal

and of course, Porky says SpotsTato (pksh : potato)

Digby : pirst blend beberything together !

Blend all spices together, then stir fry them in a hot wok with a little oil. When the blended garlic, shallot, ginger and lemon grass mix releases its aroma, add in curry paste and mix it up. Then add the chicken, lightly mix and fry it for 10 mins under medium heat.

Digby : then add in the Sikrien ! (pksh : chicken)

add water and potato cubes and cook under medium heat for 2 hrs

rest of the vegetables, preferably before serving, cook for 10 mins

lastly add in coconut milk, slow simmer until serving

EUREKA !, Digby famous Chicken Curry !

To enhance taste, add in pepper, salt and a little of sugar (very little) in substitute of MSG. In order to get the best meat consistency, leave it to cool down and heat up again (repeat few rounds) before the actual serving - but watch out for the vegetables as they might disintegrate if over cook. There you have it ! Porky crap hands acknowledging Digby's cooking skill ! Beep Beep Blue Ray ! x 3 times..
