Mom Famous Long Bean Rice

This is obviously one of the most famous recipe from Mom's Kitchen. Porky say old school dish from Cat's City, growing up eating it so kind of embedded in the hunger DNA where there is no other food that can satisfy the hungriness when you are particularly craving for this one. The recipe is easy, just 3 ingredients ..  Rice, Long Bean and Sun Dried Prawns and optional garlic. However the steps and care taken into the cooking process is solely depends on experience, it take practice, multiple trial and error to get to taste like mom's version. Have been trying to document this for a while now, few years to be exact, finally we got the chance.. so here we go ..

easy ingredients (soaked dried prawns if you get the salty type)

First - heat up pan with oil and stir fry the dried prawns until the whole house smells

Then add the long beans, cook it until it slightly soft (can add little water and cook until it evaporated)

add the washed rice, and cook or stir fry together until it mix well with the prawns and beans

Now here is the tricky part, previous attempt of transferring the slightly stir cook rice with the ingredients into rice cooker for cooking doesn't yield good result - the beans disintegrated if you do so. According to mom, the best way is to boil the rice using the same pan or wok where we first cook the ingredients in. Add water, maybe slightly more than one thumb rule of using rice cooker to cook it (you can keep adding water and check the rice consistency as you cook). Raise the temp to high heat, let it boil and evaporate, then close the pan lid and reduce to low heat. Let it simmer until the rice is cook, and mix it once a while to prevent bottom from burning, mixing also ensure the flavors are infused into the rice. This tricky part is about trial and error, experience matters !

after 20-30 mins of cooking - tadaaaa ! its done, and it should look like this. Texture of the rice is just like normal plain rice cooked using a rice cooker, but with slight oil like chicken rice or garlic rice. Porky clapped his paws, as a sign of satisfaction in recreating mum famous recipe -
